It's really easy.
And, i wouldn't bother getting performance pads. Upgrade to either a 2.0 or V6 set up.

Uprated pads will be better than OE ones but as Dean said, might as well go for 2.0 brakes, probably get them for £100.

You can either go for 2.0 set up. These have larger caliper pistons over standard, larger pads and discs. Hence more stopping power.
The V6 set up is larger again. The problem with this is your brakes do have a lot of travel on them, but once biting, nearly put you through the screen. The travel can be solved a bit with braided hoses.
For feel, go for the 2.0 set up.
If you want huge brakes and awesome stopping go for the V6. (If you don't mind the travel)

I've got Cavalier GSI rims on my corsa B.
What would be involved / needed to uprate to 2.0 brake set up?
Any guides or anything?

It's easy. Straight swap, bleed the system, check tight. Done.

Take your time. Make sure that you don't snap anything!!

so take off; disks, pads, calipers. carriers?
then replace with all same from something like a cav/astra?

If ur not happy doing them ur self get some1 who nows how to do them. Last thing u want is to fit ur brakes and then plow into somthing
