Latent heat of evaporation or something if I remember rightly... i have this hand warmer thing that you drop in boiling water, turns liquid and remains so (but cools off) until it's activated by a small metal discs that clicks in the pouch. Fluid turns solid and releases the heat it absorbed earlier.

Obviouslyworks with heat not cold, but must be a related phenomenon.

The beer is below the freezing temperature, but there is not enough contamination for the ice to form. The bubbles of carbon dioxide released when the bottle is hit act as a starting point for ice crystal growth in the supercooled beer.

Same thing happens in reverse when water is microwaved in a smooth container but won't boil until hit.
