First you need a pig
and course sea salt.
Leave the freshly killed pig to hang in your walk in fridge for 7 days. This will make it extra tender.
just before removing it from the fridge with the help of a friend, get the oven hot.
remove the head and legs at the knees. score the sides every 20mm with a sharp knife
rub salt all over.
place in oven and cook at 130'C for 18 hours.

once cooked, gather all your mates and serve
