IIRC a cavalier GSi FWD has an F20 yes?
If so, and the car was a 1989/1990 spec GSi, would the box need to come off for to change the clutch?
Is so, then fair do's.
But if not, how is it done, and whats the 'tool' needed to move the shaft to release the clutch?
Any tips?

There should be a cover on the bottom of the box. If there isn't then it's box of job.
And yeah to it's a F20 unless someone has changed it for a F16 for some reason.

iirc you take off the cover at the end of the gearbox , remove a circlip on the end of the input shaft and pull it away from the engine . that will release clutch then you unbolt the clutch and drop it through the bottom of the bellhouseing through the inspection hole .. that is unless it has a pot type flywheel but it shouldnt on that year
