Does anywhere manufacture sump plugs to suit Corsa's that come ready drilled/fitted with an oil temperature sender?

Just buy a new sump plug and get it drilled out to suit your sender

Thats supposed to be a fairly inaccurate way of measuring oil temp, have seen a few threads which people say it measures lower than it really is, and your temp sender will be knocked off on the first speed bump.

There should be a nice bug plug on the back of your oil pump which you can remove then drill and tap that, thats how I did mine. Pretty sure the smallblock pumps have the same plug

You can measure pressure that way but I doubt the reading would be accurate because the oil around the sensor would never move so it will stay cooler.

There is a guide on this on mig I think but it might be in the members section
