A re-map is where the map of the ecu has been changed to allow more air/fuel, and stuff like that. im not 100% clued up myself. some will give you a explanation.

theres 2 type of work possible to the ECU, simply change a chip inside it or replace the ECU, changing the chip makes it run slightly rich up to the point were you get more performance. if you get an chip or new ECU fitted it needs to be set up to your car, this seting up requires a rolling road session mapping the ECU, you need to remap it when you uprade engine parts to get most perfomance.

Running rich will not give you more performance unless you are measuring performance as being increased bore wear?

Mapping is something that isn't normally available on an OE ECU, it allows someone to play with far more parameters than a shitty 'chip' does as you can select various parts in the rev range and determine what fueling/ignition map to run at a set RPM so it can be varied dependant upon usage - ie. mapped for economy at low RPM but power at peak revs etc. Thats a quick generalisation and certainly far from in depth.
