When changing coolant on a 1.2 16v, do you just use 50% water to 50% antifreeze? Also is there anything else that needs to be replaced when changing the coolant?

Should be ok with that, I think its 60% max of total coolant quantity, easy way would be to drain system and use ready mixed antifreeze, and take care you don,t get air locks.

how would i go about it so i wouldn't get air locks?

Fill up try not to let the bottle run dry as you keep topping up when the stat opens , and squeeze the main coolant pipes to expel air, let the engine run for a while with cap left off, then replace cap, let car come up to temp, leave to cool a bit ,carefully remove cap squeeze pipes again and top up if required replace cap , drive car and recheck after test drive.
