When an engine is declared, I was just wondering if any of the above three would be cheaper than one another?

Is that how it works? so if I 2.0 my corsa with a cav c20xe.
I pay the same as I would for a cav c20xe?

In my experiance, saying the engine came from a Cav GLS is the winner of them all.

Cheaper insuring the conversion than the Cav it came from with me 
Astra GTE's are a mare to insure, so don't say it came from there if asked

i declared all my mods, and told them about absolutly everything, but when they asked what the engine came from it was a cavy
seemed to bring it down a bit! To my understanding like Sean-B said, i think thats how it works!
