google is your friend.
The usual stuff is open up the ports on your router that you have specified for utorrent.
Also if you right click on the file you are downloading ( in utorrent ) there is a download priority which you can set to high - that tends to help too.

It depends how many users are online at the same time as you, look how many seeders and leachers there are. My torrents peak at night when all the americans are awake.

The number in brackets is the amount that are seeding and being peers. The amount outside of the brackets is how many you are connected to.

What can I do to connect to more then? Obviously if I connected to all 1k of them I'd be getting a far greater download speed

In the settings in utorrent. Make sure you have:
Global Download Rate set to 0 (means unlimited)
Also IF you want a better speed. I beleive having your upload set to unlimited helps ( maybe its not true but i think utorrent throttles your download if your not uploading at a fast speed)
Number of Connections: default is 800 so maybe change this to 9999 and see what happens
Maximum number of peers connected per torrent : default is 125 - maybe put this up to 250.
These setting are all in the bandwidth part of the preferences in utorrent.
This probably wont make a massive difference but try it. If it doesnt then go back to default.
Most of those changes will only affect your upload but im sure that utorrent throttles your download dependant on your upload.

Indeed, but this will take priority over all other traffic, i.e if you surf the web, I've found this to be DEAD slow

Yes, thats why you change it and leave it on overnight

Priority is just the priority in utorrent, it doesn't have global control of network traffic.
