I'm reading that the FiiO E5 amplifier coupled with the FiiO L3 line out will ensure maximum quality output from my iPhone 4S.
John/Dom can you shed any light on this?

Dom will know more but the line out basically bypasses some of the phones internal circuitry.
It passes this cleaner signal to the amp, which is of better quality than the internal one.

Only if you use the line-out connections, ie: use a LOD cable (eBay is your best bet), which will, as John said, bypass the internal headphone amplifier on the iPod/iPhone.

It's worth getting a decent LOD cable though as the construction on cheap Hong Kong specials is piss poor; i've had a few and they've always produced cable breaks around the connectors after a week or two.
I'd also get on head-fi.org, plenty of info on headphone amps, LOD cable etc
And if you fancy going down the hardcore audiophile route, there are plenty of internal modifications that can be done to an iPod/iPod's DAC and firmware mods (Rockbox) to increase audio file support (like FLAC).

Fiio do a few of their own and they tend to be ok. And by 'Hong Kong special', I meant the 1 quid cables rather than the better (possibly; never actually used one as I ended up throwing together my own) built HK cable - HERE, HERE (granted there is a bit of a price difference).
There's also a few people on Head-fi that make them that might be worth looking at.

tried a few a while back - was plugged into my iphone though so guess I wasnt testing them to their full potential
I've had a pair of Sennheiser in-ear's for 3-4 years now, cost about £50. Great sounds and and drop a few bass lines, just what I want really
I think Beats are abit of a fashion statement atm.... but I admit, I do like the look of them

If you're looking at the FiiO's, E6/E7 (also E11 but haven't used one personally) is you're best bet. Although be warned that there are fakes around.
Edit - Haven't used the E1 so can't comment.
