Heaters won't work in this cold weather without it, car wont reach optimum temp but it would be "OK" yes.

because im getting no heat in my matrix and the thermo is the problem as the pipes in to the bukhead are cold and the radiator is hot?

Sounds like stat is not opening, replace rather than remove tho as you'll still have no heaters.

If its not opening surely if its non existent it will constantly be open? so the heaters will work?

If you take away the stat, the whole water system is being cooled by the air hitting the radiator.

So, aslong as you're driving, the car will just get cooler and cooler so no heat im afraid.

should be fine just wont get as hot as before internal should still get warm though

It won't get hot at all once you drive the car.

If your going to the trouble of taking it out you might as well stick a new one in, there only about a tenner.
