If I wanted to test a headunit before installing it in the car, what power supply would I need to operate the head unit? 12v DC or AC I cant remember. Also, do I connect it just to the acc (red) wire or do I need to supply power to the perm + (yellow battery) wire or both? Do I earth it or connect it to the negative of the supply. Just curious. Its straight forward when putting it in the car but I want to know how to set it up as if it were on a display board in a shop to test it out.

12v DC connect the red and yellow wires from the headunit to the live and connect the ground wire to the negative of the supply.

yeah, to power up a headunit, you need a positive and negative, just that. So if your just testing that it works, connect the red cable(switch live) and black cable(earth).
