3 times today when iv went to start the car up it has struggled and have had to press the accelerator pedal to get it to actually start but isnt doing this all the time on start up.
Anyone know what could be causing this?

1 of many possibilities mate
id run it dry and lash a new fuel filter on, then fill up... check plugs and leads aswell, cant hurt it to give it a minor service like and doesn't cost a lot.
mines had 3 castrol oil and GM filter changes, new NGK plugs, new leads, k&n air filter, mann fuel filter, cheap pollen filter, fresh coolant, gearbox fluid..... in a year of owning it and its a fairly healthy running engine

mark, for the first time ever mine did this the other day, think it was due to the fact it'd already been run (for a short journey) then started again, on a very hot day, kind of struggled for a moment....
its never done it before.
you got out sorted yet mate?
