deadman switch / cord!

You go upside down, you're not likely to be still in the seat (over board etc)... the cord that you should have attached to you then gets pulled - killing the engine.

You'd have to use a mercury switch to trigger another mechanism which pulled/rotated the kill switch, I'm not sure you could flow current through it as it boils at 350 degrees.

You could have a switch which completes the circuit when upside down, switching on an actuator which pulls a Bowden cable and cuts the power and fuel.

That's simple to do tbh
