So I've reached a stage where I have a decent chunk of disposable income every month.

And rather than do what I currently do which is gamble or drink it, I want to start spending it on something worthwhile, like a collection that can be displayed possibly, and in later life will define something from my earlier years and possibly have some monetary value.

Who collects what? Would love to see some photos to inspire me in to action

Buy some gold, definitely don't buy anything new that's is sold as a collectors item as everyone collects them and they won't become any rarer.

I enjoy fishing and have built up quite a collection of different lures, flys etc etc
