The "average" person finds three.

There is no catch. Many people do not see the Fs in the word "OF". It has been argued that the human brain tends to see them as Vs and not Fs.

when you read "of" you hear it as "ov" i assume this is why most people will count three.

It's more to do with you interpolating the sentence. You only read the important words and ignore the smaller ones.
