Have a guy coming over from Germany to buy a car that has no tax and MOT and he is planning to drive it back.

What happens if he gets stopped he cant relly say its booked in for the MOT. Can I get done? can I get if to sign and date to day he has bought it so its no longer my resposibility.

He is paying more and already paid a deposit through paypal

Just let him drive it away, he'll probably not get stopped anyway.

He may have trade plates?

Trade plates only cover the tax side of things. Depending how long the car has been off road will depend how soon it goes on ANPR. With no tax and no MOT, worth case scenario is a ticket for both, as long as insured to drive it

He is paying £1500 for the car but said it hasn't had any kind of drive in 6 months and he plans to take it back to Germany
He has seen one pic on eBay and then sent me £200 as a paypal gift so he is very trusting

One question i would ask you - is it safe to drive? Ie does it steer, brake and accelerate. Do you know it needs tyres to be legal etc etc. Not sure of any legal consequence to you, but imagine if you sell him it, he crashes and ends up dead / critical. Police will be coming to you to ask questions - why its being driven etc etc. Me personally, I wouldnt see that going anywhere if not on a trailer, on the basis i would have it on my conscience if anything happened.

it's not like the OP is forcing him to drive the car back to Germany, the buyer is making his own decision to do this.

Seems strange that someone would come from Germany to buy a £1500 car though

I had a polish fella fly over to pick up a £1000 53plate 1.8 Mondeo LX with 130k miles on it, he reckoned he'd get £1700+ for it in poland as its a luxury car hence the long journey, I picked up him up from the Airport.

Also plenty of lithuanian lorries going from lithuania to here to pick up cars (write off or just what is cheap).

Something like a 2003 laguna is very cheap over here, can get one for 600-700 hundred (no tax/test/write off). Transportation is about 350 euros, to change the steering wheel is about 1k euro, sometimes more depending on the price of parts. That laguna could be sold on for 3k euro easy.

a lot of cheaper cars are also taken to Kazachstan, Ukrain (not so much now due to their increased car import tax)...

That sounds completely legit and not dodgy at all.
