Anyone else just get the email about unlimited internet?
I've not been using anywhere near the 750mb limit recently because I'm either at a computer in work or at home on wifi, the principle really pisses me off though.
They've obviously known from the start that it's been unsustainable (I've no idea why, this should be costing networks nothing now) but have now got a large customer base, a fair percentage because of the unlimited internet, and are now changing it.

As you say, it's now become unsustainable due to bandwidth costs (it's the backhaul that costs).
But they've offered 3 options and what they're suggesting is reasonable to be fair - either a £3 increase on the £10 GoodyBag or a new £13 GoodyBag with unlimited data and/or place a 750MB limit on the current £10 GoodyBag.
The £15+ GoodyBags aren't affected at all!
But there isn't many alternatives for unlimited data - You've got Three and their All-You-Can-Eat @ £19 m/o rolling but they throttle and traffic manage; or T-mobile @ £26 12 m/o contract who also traffic manage/throttle (although apparently they're offering costlier unmanaged tariffs this month).
In comparison, even if GG ends up costing you an extra £33 a year, it's a bargain (if you're after data) compared to Three and T-mobile.

Also the old 80% of people don't go over it. So what's the problem leaving things the way they are?

If 80% of users aren't going over 750MB then what does it matter if they apply a hard limit of 750MB to the £10 Goodybag?
Obviously the users that are hammering the data aren't compensating by purchasing the more expensive Goodybags. So "data has doubled" (as they mentioned) along with the costs to O2 for the bandwidth increase but there isn't the money to cover it; as you said, it's unsustainable.
Best option is to hard limit the £10 Goodybag and create a new £13 with unlimited data; even at that price it's still cheaper than else where.

I think its a bit different with GiffGaff to be honest with it being an o2 project. Its not like its just a random company that us is using o2 bandwidth like it was in the old ADSL days.

Is there any difference? Do Tesco (who I think use O2) get less preferential wholesale pricing than giffgaff?

It's not your typical MVNO setup as O2 backed GiffGaff quite heavily at the start and, iirc, had some sort of 2 year (which would mean it's coming to an end now) wholesale arrangement going.
Still, £3 extra a month isn't the end of the world and at least they don't traffic shape or manage the data unlike other 'unlimited' networks.

£10 goodybag (this is a change to the existing £10 goodybag)
- 250 minutes
- Unlimited Texts
- 1GB Data Allowance (Tetherable) Any usage above this will be charged at 2p per 1MB [changes: unlimited to 1GB limit, allowing tethering]
£12 goodybag (introducing this new goodybag which still includes unlimited mobile internet)
- 250 minutes
- Unlimited Texts
- Unlimited Mobile Internet (Not Tetherable)
Seems pretty reasonable to be honest and i can't really see any other tariffs (PAYG/30-Day rolling) that beat this - be interesting to see if anyone does spot a better deal though.

But everytime I've had a contract my monthly bill is ALWAYS more than the tarriff regardless of how many mins/texts you get and how careful I am. Check the forums or their twitter page, usually the first place to hear of any issues. But there was an activation issue with GG earlier, think it's been fixed now though.
