Can set apps to be default, like Sparrow for mail, chrome for internet etc.
Toggles for wifi, flight mode, 3G etc.
Scrolling dock
Speed up animations (makes the phone appear much faster if you're into that sort of thing)
Add gestures, like swipe up for multi-tasking dock (zephyr)
Replace messages app completely with for example BiteSMS so you can repy directly from the notification without going out the app you're in.
That's about all I used JB for other than Installous which is now gone.

.....as well as free apps, tweaks, functionality-addon apps etc.
As Ash mentioned, it's worth it just for ncsettings/toggles - why Apple haven't added this to iOS is beyond me...

Can also enable the nitro engine for Chrome browser, which as default only Safari has access to.

Removing the jailbreak properlly from my old 4 was a right pain in the arse. Only problem i had with it.

Jailbreak went just fine the second time around, but Cydia appears to be just as buggy and useless as back in iOS 3 on my 1st gen. iPhone.
Haven't actually managed to install anything from Cydia as it keeps coming up with errors...

Saurik made some changes this time whereby Cydia comes 'pre-loaded' as part of the jailbreak meaning it doesn't have to do a full refresh on first load, instead it just refreshes stuff that's changed.
