tbh there should be no need to jailbreak you should be able to do it anyway

Well, I've updated, but now my phone is totally fucked, It's in emergency call mode and it wont restore when I plug it into iTunes

Mine went to safe mode after i installed it, currently just syncing all my stuff back onto it! Timed out twice already though

yup, itunes is 8.2 which is latest so it says.
unplug everything,
turn on phone, says plug in, so i plug it in and it says ' accessing itunes store'
then it says
'we could not request your itunes store request. the network connection timed out.
make sure the network settings are correct and your network connection is active, then try again'
just keeps doing this over and over.
