IE when the engine stops has the fuel been cut or has it stop sparking? I dont know..
Start the engine keep key where it is, remove sparkplug and see if it will spark when cranking WITHOUT removing the key OR taking it back to stage 1 - - will try this.
Will the engine fire right up once you take the key back out and start again? IE fire up without any problems?
No it chokes abit (As if plugs are to wet) then starts up
Any engine Faultcodes?
Not as yet

getting somewhere now.
IF you are 100% sure there is fuel and spark AT ALL TIMES so non of them are being cut to stop the engine from working.
An Engine needs Air - Fuel - Spark.
Pull out the plugs, look in the back of any haynes manuel there is a photo of a range of plugs from Lean to Rich.
Have a look and tell me what you find.
BUT you have the last 2 (Spark and Fuel) from the checks you have done, this means you have a problem on your air side.
ICV? is this stuck open? have you tried clamping the pipe shut?
Air Flow Meter have you test this?
100% check as i need this infomation - Start the engine keep key where it is, remove sparkplug and see if it will spark and fuel spraying out of the plug hole when cranking WITHOUT removing the key OR taking it back to stage 1

With no manifold there wont be any back pressure either? Maybe best to get all that little bits sorted first so that its 100% built

not really a last laugh. its well known the english fled to scotland/wales so wouldnt get killed in the old times or bummed by the romans lol, but on a more serious note....may be worth just getting the ex manifold on and bodging a connecting piece for now?

Don't try to look for other problems while you've got known problems. Get an ecotec pipe or something to connect the air inlet up, if the powercap that's on just now isn't even close to the TB that's going to cause problems as well.
Why does the manifold need to be sleeved? So when you've tried starting it up it's not had an exhaust manifold on or the lambda plugged in?
You need to get it ready to run before you try to run it. It's basic stuff.

So it needs a flange welded on? Or is it not long enough?
That above didn't make sense.

So why not just temp fit the manifold but just don't join it up to the cat? So that you can have the lambda set up properly.
