Seeming as you love track work, if find it odd you want a turbo, unless this is down to wanting the car as a purpose of both road/track.
I vote VX220/Elise if you would track it.

Some Impreza specific stuff...
If you're looking at a classic, the 2.5 is probably not a factor - as the first 2.5l came with the Hawkeye (2006) Impreza in the UK(above budget). If you do find a classic that's had a 2.5 dropped in, it's likely to have been rebuilt/forged in which case it's going to be fine. The 2.5 issues seem to be completely "fixed" by a specialist rebuild, with an uprated HG/Bolts and in some cases forged pistons.
If you're looking at newage cars, the major benefit to an STI seems to be the gearbox. The 5 speed boxes in the WRXs aren't too great over 300bhp. Handling and engine wise, if you're going to seriously modify one - you're going to replace all of the parts that differentiate a WRX and STI anyway (coilovers, ARBs, Turbo, Intercooler, etc.)... it's just the gearbox/diff which I think can be high 1000s/close to 2k for a second hand 6speed upgrade. The 2.0 in the Blobeyes has just got an excellent reputation, and apparently are rather reliable.
5K is probably a 03 STI (Blobeye) or an 05/06 WRX, or a very nicely pre-modded classic. If you could find a classic with a newage engine and 6speed - you could be onto a winner, but if you're looking to buy standard and mod it up yourself - 03 STI probably the most sensible.
As for how they are as track cars (I'm assuming yours would be a track toy), if you've followed my thread you'll know I've got minimal experience with mine - and even less of other cars, so take my comments with a pinch of salt!
My only trackday experiences are driving my Impreza and passenger rides in a Clio 182. IMO the Clio driver is more committed/confident/capable and gets more out of his car on the track than I do - yet my lap times are still a fair bit faster (which is a given, with 50% more power) but also my corner entry speed/exit speeds tend to be a fair bit up too. I'm sure the Impreza has got lots more to offer, BUT - I probably owe 12k to my car vs 4k on the Clio... is it 3 times better than a Clio 182? No chance!
If I were to run a track day car on a budget, it would be something cheap and FWD like the Clio any day of the week - but I (like you) wanted something AWD or RWD. The Impreza is a heavy lump so I imagine more expensive on consumables (tyres/pads) than something like an Elise or VX220 - I'd seriously consider one of those if I wasn't such a Scooby fanboy.
Things that can go wrong on a tracked newage impreza seem to be fuel and oil surge related. From talking to other car owners at a couple of track days, they seem to have a reputation for breaking down a lot and causing red flags - but I think that's just the sheer quantity of cheaply bought and poorly maintained classics that rock up to track days. I've spent quite a bit on mine, but none of it has been really necessary - just bad product choice and buying most mods twice 
Like any enthusiast car, if you take your time and follow some forums - you can probably find an 03 car that has been looked after, or alternatively a well modded classic.

Yes I will be taking out on track but this car will be mainly fast road and track (ie being able to drive to a circuit in relative comfort compared to the corsa, get a few fun laps out of it and drive home, ideally, something better suited to drive to and from the nurburgring- corsa was much more at home on a track, but not so much on the journey-ie no music or heater etc)
Plus always been a scooby fan, so basically see this as more of a step towards a weekend toy for both A/B road blasts and the odd track day
So im guessing an 03 Sti is a good way to go, but really need catch up on model references ie-blob/hawk/eye etc lol. But yeh seen a few in budget that i have liked the look of
in regards to people saying evos/scoobs being rubbish for track use, very much disagree, seem to look like great fun when iv seen them on track (pickford and Ak will back me up on this) plus saw a p1 scoob flying round the ring last sunday, looked awesome

see your point jambo but you are right this one will be weekend toy and used for the odd track day, did look at vx220 but really.want a turbo car, they are still going for more than I can spend

Classic = Everything Pre-Bugeye (the morette looking one)
Newage = Bugeye, Blobeye(mine), Hawkeye
Hatch = The 08 onwards
Bugeye = 2001/2002
Blobeye = 2003-2005(very few 06's too)

Bug and Blob are 2.0 engines across the board, Hawks are 2.5 unless you get a Jap import - as they're still 2.0s.
The only Blobs to still fetch a "premium" are the JDM ones like Barnshaws, and the "Widetrack" ones like mine. Widetracks are 2005/06 only - have the adjustable centre diff like the JDM ones and some other bits and pieces like the Hawk Interior and different suspension setup.
The Non-widetrack/JDM Blobs can be had for 4-6k - so much car for the money IMO. WRX models even cheaper still.
Most Newage STI's will do 320bhp with just a filter/remap, WRXs probably 280-290 with the same. Beyond that it's turbo time, which is the stage I'm at. My car in theory can do 400bhp with a different turbo(bought), intercooler and the decat (already done). To do it "properly" I would be adding injectors and an FPR too. Its quite a good margin for "cheap" improvement IMO, compared to any N/A car of similar budget.
Ask away, I'm no pro but I've spent hours and hours talking to suppliers/tuners/other owners etc - so might have some useful nuggets somewhere.

I don't think you'll get much for the Corsa, if I could turn back the clocks I would of kept my Corsa, it was so easy and just worked. Even if I SORN'd it and got it out a few years later that would of been better. The money you get back is absolutely fuck all in the grand scheme of things.

wont lie im a massive fan of EVO 6's but just a bit too much money, looking at a local jap specialist to me the servicing costs are a bit more cheaper on the scoobys if im honest, would prefer a Scooby aswell just that little more than an evo, main reason behind the decision
