E30 318is or 325 sport.
Either one would be pretty good out of the box tbh!
But you could spend a couple hundred on sorting bits of the suspension out to make it more track friendly

for less than £1500 u get this....
C20XE, V6 brakes, (just bought rear disc beam for it),left with £200 to upgrade the suspension a bit more (if the budgets £1500 inc buying the rear disc conv.)

got to be 106/205 or 306 or saxo if cheap.
strip to the death,
find cheap 15's alloys 50 quid
tyres - 150
gti-6 brakes 150 including pads and discs
uprate suspension 400 quid ish
thats the basics delt with, have fun then progress from there.

id get a renault 19 16v for like £300 off the bay,
get a megan/williams 20.16v engine £500
spend the rest on breaks and suspension
renault 19's are good track cars cus they handle well and are stable/break well at high speeds. Also quite light when stripped

if you are replacing the brakes, suspension and engine surely it would make more sense to use a poverty spec clio
