Back on the PC now, turns out the internet goes through the Exchange server, not the main server so it has been working the whole time

Is you exchange server an SBS box? If so, this will be controlling DNS.

No idea mate, all I know is we have a main server with all the data on it and an Exchange server Networking is my only weak point I can do the basics but you're verging on the complicated side there
