Little tip....

Way to check on a steak, is... put your fingers to your thumb and tap the meat of your thumb.

Little Finger will be really hard, = well done
next finger, slightly softer, med/well
next finger, softer still, med/rare
index finger, rare

That's how soft the steak should be when you poke it

The red liquid coming from your steak when you cut it is not blood. All the blood comes out of the animal fairly rapidly when they slice the neck open after slaughter. What you're seeing is a combination of water, protein and other stuff from the meat.
