what do I need and from what cars ??

Firstly you need brakes otherwise yes you will be BREAKing things

Cav SRi/GSi
Astra GTE/GSi
Calibra 16v

Any of these.

U need

Calibers, brackets, discs and pads, and brake fluid.

Simple straight swap for all parts.

so i dont need the wheel hub, will the brackets be of the original car ??

Do they make much difference? what size are 2.0 dscs in comparrison with say sri discs?

2.0 discs are 256mm where as the sri i think are 236mm

Aye, SXi/SRi/1.4 Sport = 236mm x ??
GSi/1.6 Sport = 256 x 21mm
2.0 16v = 256 x 24mm

what size are v6 discs/calipers?

Bun

V6 Calipers hold 288mm discs.. Dont know the width
Turbo Calipers hold 284mm discs. Again dont know the width.
