Sorry mate, i pressed delete instead of reply having a bad day 
I would always run seperate RCA's from the HU if possible However, im guessing the two amps in the back are for subs? if so, then i would run the single rca from then sub out (or rear out, if it hasnt got a sub out) on your HU then pray that one of the amps has a line through. So you go HU -> Amp1 then Amp1 -> Amp2. That way no line splitting is involved so no loss in voltage from the HU, better signal 
But if the amps are for different things, ie: 1 for comps 1 for sub etc then yea run two rcas 
As for the gauge of the cable, well if your making your own then just get some decent 12/14 gauge stuff But i would buy a decent set in the first place mate
