your email address, obviously and what ever info you put in your profile. On top of that they can also find out your IP address (via file transfers) and if your using msn messenger on a network then someone could run a packet sniffer and find out info you have been sending.

well yea, your hotmail profile/msn messenger profile are the same thing, thanks microshites PASSPORT thingy hence why i just put random shite on mine
As for info, well apart from that, then the IP address can be had, again, using a simple port sniffer when doing a file transfer as messenger connects directly to each machine rather than going via msn's own servers.
And if your on a network, then anyone (who has access to the network, like at school, college, uni, work etc) can run a port sniffer (if they have admin rights to install software like that) and see information running across the network (a little bit of knowledge is needed for this). The person would then have to shift through all the info and pick out bits like passwords (which will be encrypted usually, unless a piece of software doesnt do it)...but msn's protocol doesnt encrypt sent text (not in version 5 and below anyways), but your password/username is safe and login information is safe under msn messenger as they are encryted using MD5
but i havnt looked at the recent protocol, so i cant comment on versions 6+ as i dont know whether they have started to encrypt everything be sent
tbh though, its very unlikely someone has gone to that effort to do all of that, they would have to have alot of time on their hands and know abit about networks and how packets work etc
