Not really weird......the symbols change each time, to try to confuse you, but if you actually work it out, every single number on there finishes with the same symbol, so it doesn't matter which you choose...

99 -> 9+9 = 18 -> 99 - 18 = 81
98 -> 9+8 = 17 -> 98 - 17 = 81
97 -> 9+7 = 16 -> 97 - 16 = 81
96 -> 9+6 = 15 -> 96 - 15 = 81

And so on...
