How do you modify the arches on the corsa in order to stop them rubbing when i go over bumps??

Unbolt the arches and cut some of the metal away and then bond your arches on and see if that helps.
What wheels/offset etc?

they are 16" not sure of the offset,
the car has been lowered but i dont know how much by i would say 60mm

What profile tyres do you have on there? As unless the offset is way out and you have a decent profile tyre they shouldnt be too bad.

Must have a dodgy offset then, I'd start with debolting the blastic arches and removing some of the metal and see where that get's you.
Try and check your offset aswell
