Reduce the width of steering rack, therefore less amount of 'turn' required on the steering wheel to turn more sharply.

They don't reduce the width of the rack as such though.

It's the ratio in the rack that changes. Example, car may be 3 turns from lock to lock. A quickrack will put it down to 2.

When racing you don't want to move your hands on the steering wheel i.e not have to feed the wheel. Quick racks reduce the steering ratio for this purpose.
