This is my car with wheels on, not the best pic to show them, but the tyres are 195/45/16! And the wheels are ET45!
Will I be able to drop it 60mm without getting any rubbing etc?
Or would -40mm look pretty good? (would prefer this, but chance of a cheap -60mm set up)
Any opinions/help on the matter?

yes you can go 60mm down, might get a little bit of rubbing like it did on my old corsa but just de-bolt the rear arches and it will be fine

Yeah you should be fine!
As said, take the rear arch trims off, grind/remove the studs that hold them on, and stick the arches back on with tiger seal or similar.
