i caught a 21lb carp on tuesday, been catching 1-2lb trout and eating em but they taste like mud

Yeah gutted em, washed em and left em to soak in salty water for 24hrs, but still taste of crap, have tried 3 times now and still can't get it right..........fish come outta river tho, not the coast/sea etc....
