I think the plastic that makes up most of the interior on my Ibiza is really soft and seems to mark/scratch very easily like so
Is there anyway to restore the bits of trim at all?

urrm i dont know tbh ask rich but chemicle guys trim gel is very good for inside plastics and engine bays

I wouldn't suggest using CG NLTG on interiors unless you like mega shiny sticky plastics tbh
Won't get a product that'll improve your scratches though - I doubt very much that even a smart repairer could sort that fully - maybe sort some of the deeper / bigger ones by retexturing the plastic. You really can't be that careful though judging by the state of it though!!

The glove box is just an example.
Is there any thing which would maybe 'mask' it and take it to a nice black instead of the grey'y-black it is at the moment

It's grey plastic so it won't look black unless you paint it?!
You can make it shiny or satin finish with various products but you will still be able to see the scratches.
As said by others, other alternatives include replace, spray or flock.
