are non hubcentric spacers as bad as they say, i cant see how they would move once bolted up

not if they're less than 5mm. ive used them a couple of times, just keep an eye on them because they can crack

theyre 20 mm
4x100 have them lying around. was thinking of getting some longer bolts and giving them a whirl

problem with that is, the wheel wont be sitting on the hub and the weight of the car will be resting on the wheel bolts.

I have 20mm hubcentric and converted to studs and nuts. Instead of bolts. No probs for the past 3 years.

Just was recommended due to the bolt length that would be needed otherwise and possible increase of stress on the spacers, wheel, hub.

ideally, the hub is what the wheel sits on and the bolts hold it in place
non-hubcentric spacers mean that all the stress is put on the bolts, not usually a problem but if you're running uber wide banded steels it might not be ideal
depending on the style of them, you might need to buy longer bolts
4x100 hubcentric spacers are everywhere 2nd hand on e38/wheelwhores etc

its just 60 quid for a couple ally plates

do what you feel is best, no-one is trying to put you off for their sakes, only yours.
your ibiza isn't a 1.2, it's a 1.8t, think about the stress on those wheel bolts when you boot it off the lights etc
i'm sure you can get hubcentric 57.1 adapters for around 100 quid 2nd hand? just keep and eye out for some

Its not as simple as comparing larger spacers to spigot rings - with the larger spacers, you lengthen the bolts and therefore more force acts upon them, and if they aren't supported by something hubcentric, they are under a lot more stress...
