and also this has decided to rust through in the drivers footwell, is a small plastic grommet thing, worth just getting a small metal sheet to weld in over it?

Although if it's the same as Mikes, you need a fold on the rear of the sheet so it can be rivetted to the rear panel and not the remaining floor.
Not expensive at all, we would have done it to Mikes if we had more time.

will a sheet of aluminium be ok if just left untreated? maybe undersealed the udnerside and leave it at that?maybe some of that not slip chequer plating also?

Tread plate is more expensive.
Alu will be OK untreated but underseal would quieten it down a bit.
I forgot the sealer as well, in case of leaks.

No need to weld that, pop rivets will be fine.
