Usually i just use an old tshirt or something but im off to Halfords after work so i might aswell buy something decent and more appropriate.......what do you guys use firstly to apply the polish and then secondly to rub down/shine up

Apply with a Foam pad, remove with a Microfibre cloth

i have always used a microfibre cloth to apply and remove , never had any problems, as long as its clean

Turtlewax ICE foam pads are pretty good from Halfords too... nice size
