I think BACS payments can be reversed, CHAPS (same day) can't - but then he'd have to pay £20 or whatever his bank charges for such payments.
I'd tell him to just pay cash into your account if you want to be extra sure he can't screw you over.

I don't think you can, whenever I pay something it always warns me to check the details are correct because once its gone it's gone.

cant cancel CHAPS
apparantly BACS can be cancelled as long as its within the correct deadline
