What does 1600kg gross weight mean?
The maximum weight is the trailer & whatever is on it? So say the trailer is 300kgs I can put a 1300kg car on it? How do I find out what a cars towing weight is?

gross weight means total weight iirc. net weight would be weight of the trailer alone without anything on it.
may be wrong, but that's what it means on anything else in life.

Cars towing weight is usually on a plate on the car,
might be listed as various things,
Like maximum train weight, which you have too subtract maximum vehicle weight and you get your towing weight for one example.
Beware some cars cannot be used to tow, certain mondeo st's for one example.

Nobody seems to put net weight on the eBay ads for trailers though, so how can I use the gross weight to work out what weight of car is allowed?

The only way to get an accurate idea of net weight is by looking at manufacturer specs, obviously that's not possible if it's homemade.
I usually find Parkers handy for finding towing weights.

They're not homemade but the descriptions are somewhat vague on some of them

Unbraked towing weight - 690kgs
Braked toeing weight - 1200kgs
What does this mean? They just keep throwing these different words & weights to confuse me

That's whether the trailer has brakes or not. Any trailer over 750kg gross has to have brakes so it's the braked weight you want. 1200 isn't much use.

So I'd need a different towing car, gash! I guess 1500+ is the best? Car roughly 1200kgs?

A trailer capable of carrying 1200kg is likely to weigh at least 400kg unladen so that's at least 1600kg you'd need.
