For an ecommerce site would people think I white or a dark background would be better?

Light, everytime, unless you're selling products that the majority are white.
A lot of themes fuck up the functionality and don't allow some addons you'd addon to be used, so be careful with your choice of theme.
Templatemonster, themeforest and bossthemes i've used in the past. Template monster ones were a bit shit though.

Agreed with both statements.
A lot of theme designers concentrate on design and have sloppy programming practices which means you have to waste time fixing their coding cock-ups.

If you know where to look then a lot of the themes can be 'had', which makes things a lot lot easier as you can trial the theme prior to spending out on a license.

Me/Sam have narrowed it down to 2 themes.

Can't say i've ever seen or had that. Found a 'call home' line in a footer of a WP theme once, pretty easy to spot and remove though.
Faz - Thunderbolt, i would say the Elite theme is more aimed at fashion/women's products
