Putting it in a pan is awful, practically stews in its own fat. In the grill. Not greasy or anything. It's proper

Well, after years of being in the rare/medium rare camp my missus had a well done sirloin the other night....

And Yum

However it was about 1" thick and the fat had baked to a crisp
