i wanna get a sub and amp for me car but dunno what i need exactly. not bothered about it being stupidly loud but i do wanna be heard and get some decent bass.

I got a sony mp40 head unit and 2 x 300w speakers in the back.

also, what sort of prices am i looking at.

seen a nice sub box insale for 59.99 (rrp 89.99) which is 350w.

also - what size amp - been looking at one which was 250 - is that enough.

It really depends what you want really, and you do get what you pay for. For a decent but not over the top sub, i would pay around £100 and about the same, if not a little bit more, for an amp. If money really is an issue, then a sub around £60 as you said will still sound deeper than rear speakers.
As for matching an amp and sub, make sure you look at the RMS power figures, not the peak or max ones (you can pretty much ignore them!) and make sure the quoted rms figuers are given for the same resistance (measured in ohms)
Quick example in case i confused you, if you have a 250w RMS @ 2ohm sub, make sure the amp you get is about 250w RMS @2ohm too, if not a tiny bit more powerful with the gains turned down,.
