I've seen a few cars with number plates made up off 5 or 6 numbers and no letters whatsoever. Can you buy these and put them on a British registered car? Or are they only for cars registered in the Channel islands?

yes you can buy them, try the dvla website (they are cheapest on there)

No Isle of Man is like MAN 123 or G 234 MAN or sometimes just MN.
I've seen them just 5 numbers but no idea how its done.

A mate of mine has a 5 number reg and i'm pretty sure his car was registered there.

That's 2/3 letters and 3/4 numbers.
Letters must contain an I or a Z IIRC.

For UK cars?
Any number dealer, newreg.com, regtransfers.co.uk etc.
DVLA also do them but at auction.
