Have you correctly connected the remote lead from the amp to the head unit?

the amp remote connection must be connected to a permanent live.
Does the amp instantly come on when you put the fuse back in? Its either going to be that your amp remote is a permanent live, or that the relay for the remote turn on inside your amp is stuck closed.

Splice the remote lead into the switched live on the back of the head unit instead of the permanent live, or even simpler fit a switch on the remote lead to save you removing the fuse you could even extend the remote lead to near the drivers seat and put the switch near you somewhere then you dont even have to open the boot!
