but, what are the main reasons for "cruching" gears?
for example reverse

Something about a syncromesh or something like that.

This is what my driving instructor told me, older cars take longer to syncronise the gearing or something

Reverse is a straight cut gear. Most cars dont have syncromesh for reverse aswell which is why you cant select reverse whilst moving forward.

give it a second or two with the clutch depressed before selecting the gear

It's just what they do really. Sometimes they crunch when you aren't moving...
