I'm in my final year at uni studying Combined honours English Literature and Language. It's graduating time this year and i can honestly say i don't have a clue what i want to do after i graduate. My gf's Uncle runs his own magazine in Chicago and i have been offered the opportunity to go over there and work with him for a couple of months after i graduate. Now i have mixed feelings about whether to go as i risk missing any jobs i may apply for after i finish. If you were in my shoes, would you take the plunge and go, or take the sensible route and apply for work and possibly set myself up with a job after i finish. I know this post is an essay, but i'm trying to get at the point of "Have you ever taken an opportunity and it paid off for you" type thing. Any sensible replies welcome

Go for it.
If he's offering you the chance to work for him for a couple of months, he's obviously hoping you agree, that you impress him, and that he can offer you a job in the future.

Well yeah i would want to go but there's not just me to think about, my girlfriend is also doing a degree at the same uni and it may be great for me but what if she could find nothing over there in terms of work. Also if he couldn't keep me on for some reason, then i may have missed job opportunities in the UK hence the dilemma.

But there will be other jobs. If you don't try, you'll always wonder what would have happened.

There will be the the next round of jobs to apply for the following year, and with that work experience in another country under your belt, you will be more attractive to employers 
Definitely take the job in Chicago; I think you will regret it if you dont. Dont worry about your girlfriend finding work, sounds selfish but this is something you need to do for yourself. If you split up and she was the reason why you didnt go, you would be kicking yourself.

u only live once, keep that in mind! i went to spain last year with about 3 days notice, was ace while i was there but came back cos i had no money left!

if it was me, i would go. saying that you were "headhunted" by a magazine in chicago which you went and worked there for awhile is going to look impressive on a CV at the very least. think of the experience you'll also gain etc.
on the other hand there is your girlfriend to think about as well, which is the dilemma on my part

From someone who upped sticks and moved 4000 miles away to the middle east for my placement year for Uni I'd say go for it.
a) It is only a few months
b) If you don't like it, you can come home (This won't happen)
c) You meet MANY people abroad, all who work in many different industries, and it gives you a fantastic chance to network across the globe. You may even meet people abroad who may offer you a job, as might your girlfriends dad.
I still work for people in Dubai and I came back here 5 months ago now.
Jobs do not come about for the first few months after University graduation. They come about all the time.
Add to the fact you will have International experience on your CV means even if you do come back after a few months, you have an advantage straight away over every other graduate applying for jobs.

I would go to Chicago, as has been said it would be very good work experience and look good on the CV. Also possibility of getting full time employment whilst over there.
In the mean time start applying to companies, even speculatively a few months before graduation. Some companies can offer you a job on a conditional basis, i.e. you pass or you get a certain level of pass etc...
