Well buy a cookery book, or make a dish you already know but use a different ingredient to add a different flavour, so make a spicy lasagne / spag bol

You could always do a 3 course thing, takes more time and effort getting everything to be cooked in time properly

Get some fresh fillet steaks from the butchers. Buy some peppercorn sauce (or something you like) from asda, along with some fresh veg and mash. Stick it all in the oven, fry the steaks.

Get some strawberries and creak for dessert.

Job done.
