Do you have to drain the whole system or can you get away with just quickly changing them and topping up the fluid?

There not quick to change. Most of the time there rusty and a pain in the arse.
Only takes 10 mins bleed a whole system anyway.

If you near nightmare stories then do it properly yourself! Why try to do it quickly and run the risk yourself?

im not looking to quickly do it, just wondered if you could get away with it but clearly not(sometimes theres little tricks)

Soak the hose connections for about a week morning and night in WD40 before you do the swap, theres one tip.
Make sure the calipers are right way up. Cousin didn't notice this and took him 2 weeks to figure it out.
Bleed the system totally through with new fluid.
