I read a study a while ago that the percentage of saliva goes up as you finish a drink. Makes sense really, more mouthfuls means more is being washed back in to the glass.
So the bit about the bottom portion not tasting as nice may have some mileage.

because i drink coffee and tea without milk i usually get less of a cup if someone else is making it because they always leave space for milk, pisses me off
