If you had some off food, say meat, but stewed it for hours, apart from tasting bad, would it be safe to eat? Much the same as boiling water for 10 minutes kills harmful bacteria...

The problem isn't the bacteria which as you say can be killed through cooking.

I dont think it's cause for concern. I made a beef stew a couple of weeks back, froze it, thawed it out on thursday, cooked it for 20mins on the hob tonight and ate it. It didnt smell off and it tasted fine. I just wondered that all.

Was the meat past it's date when you cooked it? If it's frozen it stops the build up of bacteria, cooking it past 100 degrees should kill most of the bacteria, so bacteria-wise you'll be fine

If it was cooked it be reet, if it was raw might be a cause for concern

Nah the meat was fresh frozen before I stewed it for 3 hours the first time round.

If it was fresh when first cooked, then it was frozen, then thawed and cooked again it will be absolutely fine.

Chicken a def no no
Pork I wouldn't use
But beef I have cooked off when it's gone partially dark brown in places.
The tip is not to smell it

It wasnt so much my situation, the fact it had sat in the fridge a few days made me wonder if it would be ok, but it smelt fine and it seemed not to have done me any harm.
But I wondered about this eating off meat thing before, like eating pheasant, which, I believe, is supposed to be slightly rotten to give it its flavour before you cook it?
